This is Grade Select roe from Oncorhynchus kisutch — coho, also called silver salmon — wild-caught in Alaska and processed by Copper River Seafoods in Seward. Coho roe shows up less often than chum or keta roe, so it's a good pick if you want to try something a bit different. The pearls are plump and glossy, with a clean, briny-sweet flavor.
