Beluga Fusion is a cross of Huso huso (the classic Beluga sturgeon) and Acipenser stellatus. Pure Beluga caviar has been banned from US import since 2005, so this hybrid is how most Americans get close to that flavor today. The pearls are large — some of the biggest you'll find — running light to dark grey, with a smooth, buttery, nutty taste and a soft pop.

How to Serve
