One of the only truly American caviars.
Hackleback comes from Scaphirhynchus platorynchus, a small sturgeon native to the Mississippi and Missouri river systems. It's one of the few sturgeon species where legal fisheries still exist in the US, which is part of why Hackleback has such a strong following among American caviar lovers. The pearls are dark grey with a silvery sheen, and the flavor is nutty and buttery, with a dense, firm texture.
