Imperial Kaluga Fusion is a cross of Kaluga sturgeon (Huso dauricus) and Amur sturgeon (Acipenser schrenckii). Kaluga is one of the largest freshwater fish anywhere, native to the Amur River — some call it the "river Beluga" for its size, though it's a separate species. The pearls here are large and brown, with a smooth, buttery taste and a long finish.
