Paddlefish (Polyodon spathula) is sometimes called "spoonbill" for its long, paddle-shaped snout. It's in the same order as true sturgeon but a different family, and it's generally more available, which is why Paddlefish caviar tends to be one of the more affordable ways to try American caviar. The pearls are medium-sized and grayish, with a smooth, earthy flavor.
