Persicus Osetra comes from Acipenser persicus — sometimes called Persian sturgeon — a species distinct from the more common Acipenser gueldenstaedtii used in our Caspian Osetra. The pearls are firm and glossy, with a nutty, slightly briny taste and a clean finish.
