Sterlet Caviar comes from Acipenser ruthenus, the smallest of the caviar sturgeons. It matures faster than other sturgeon species, which made it more available historically — one reason it ended up on royal tables across Europe for centuries. The pearls are small and silvery, with a surprisingly rich, nutty flavor for their size.
