Osetra Special is Acipenser gueldenstaedtii caviar, hand-picked from the best lots for color, aroma, and pearl structure. "Special" grading is about selection, not a different fish — it's the top slice of the harvest. Medium amber pearls with a creamy, hazelnut flavor.
