Every set follows the same rules, so you know exactly what you are getting:

Each set page lists the three products by name and weight, plus a short note on how to serve them. The canapé sets, for example, are meant to be assembled in a few minutes: a spoon of crème fraîche on a blini or toast, a ribbon of smoked salmon, a little dill or lemon. The cheese and charcuterie sets are best served at room temperature, so take them out of the fridge a little before guests arrive.

Many people search for a caviar gift set, so we want to be clear about what is on this page. Our current ready-made sets are delicacy sets: smoked salmon, charcuterie, cheese, seafood and tea. None of them includes caviar.

The good news is that several sets are a natural base for caviar. The smoked salmon canapé sets come with mini blinis and crème fraîche, which is the classic way to serve caviar. Add a tin from our black caviar collection or a jar from salmon roe, and you have a complete caviar gift with everything needed to serve it.

A few tips if you are building a caviar gift yourself:

• Keep caviar cold. It should go straight into the fridge on arrival and be eaten soon after opening.

Most of our sets contain perishable food, so timing matters. Here is how delivery works:

• Perishable orders are packed cold and shipped Express, arriving in 1–2 business days within the contiguous U.S.
• Shipping is free on orders of $300 and over.
• Same-day local delivery runs from Coral Gables to Palm Beach, Monday–Saturday, for $50, or free on orders of $300 and over.
• Alaska, Hawaii and Puerto Rico can be shipped at extra rates.
• We do not deliver on major holidays (New Year's Day, Memorial Day, Independence Day, Labor Day, Thanksgiving and Christmas) or on the day after.

In practice, that means you should not plan for a gift to arrive on Christmas Day, Thanksgiving or the day after either one. Order early in the week before the holiday so the package arrives on a business day and the recipient can put it in the fridge right away. If you are sending a gift to someone who may be away, choose a date when you know they will be home.
